How long did it take to load/unload a freighter? Or unloading rate in 1000t(or NRT)/day. What were the general port capacities during WWI and WWII (in t/day or ships /day)? If someone could recommend a book on WWI logistics (both naval and land) I'd appreciate it - if there's any.

The WWII situation is covered in the volume Global Logistics and Strategy 1943-45 in the series The U.S. Army in WWII. Port congestion often delayed ships in port for weeks before they could unload anything. The dominant successful strategists of WWII -- FDR, Churchill, Ike -- had experience from WWI in planning strategic logistics. Commanders with less experience in planning for logistics made some very questionable decisions in WW2. In that category I'd include MacArthur's apparent expectation that the Philippines could be supported in 1941-42 and Montgomery's delay in capturing Antwerp and other Channel ports in 1944.
